Whenever I need a no-fuss, delicious salad, I reach for this Arugula and Apple Salad with Lemon Vinaigrette. The ingredients list is short and except for the arugula, is filled with pantry staples. I do the bulk of my grocery shopping at Costco, but they sadly never carry arugula which means I have to make a special trip for it. Luckily my nearby Safeway sells a bulk 16oz organic tub of this yummy leafy vegetable for just $5 a pop. That’s 4-5 days worth of small side salads for our family of four.
This salad come together in less than five minutes, which is a must on busy weeknights. It’s also fairly forgiving if you have other things you want to throw on it. But feel free to keep it simple with this one because that’s where it shines.
Arugula & Apple Salad with Lemon Vinaigrette
Ingredients
16 oz Arugula
4 apples Apple
Cheese (optional)
1 lemon, juiced
1/4c Tbs olive oil
2 tsp honey or agave nectar (optional)
1/4 tsp salt
Freshly ground pepper to taste
Makes 12-16 small side salads
Instructions
Combine arugula and apple in a bowl.
Combine lemon juice, olive oil, salt, and pepper to taste in a small jar. Shake well.
Pour dressing on the salad just enough to coat. The dressing is potent so use it sparingly. This makes enough dressing to cover 16oz worth of arugula (12-15 small side salads). Mix well.
Sprinkle cheese on top if desired. We used feta because that is what we had on hand but I think a good pecorino romano would be even better. I love this salad as is and often don’t add any cheese at all.
Makes 12-15 small side salads.
