These One Pot Black Beans and Rice hit all of the key features that make for a staple meal prep recipe: fast, delicious, healthy, and cheap. This simple recipe is a nutritional all start that won’t break the bank. The ingredients list is short and filled with common ingredients that pantry staples for your average meal prepper. You can whip up this big batch in under 30 minutes (thanks to the convenience of cans) and freeze any leftovers because they will be just as good when reheated.
4 cans of black beans, drained and rinsed
4 cups of rice
9 cups of water
1c chopped onion
2 bell peppers (any color)
2 cloves garlic
1t salt
1t pepper
1t cumin
1t oregano
2 bay leaves
2T olive oil
Dice bell peppers, onions, and garlic.
Heat olive oil in large dutch oven (we got ours here) over medium high heat. Add peppers, onions, and garlic and saute for 5 minutes.
Add spices and stir for 1 minute.
Add beans, rice, and water.
Bring to a boil, reduce heat to medium low, and cover.
Simmer for 20 minutes or until rice is fully cooked. Add more water if necessary.

This recipe makes 14-16 servings. Eat with a side salad or roasted vegetables if you want to beef up the nutritional content and get in those 5-7 daily servings of fruits and veggies!
